To be quite honest; I had an uncooperative artichoke as well. I cut the damn thing and what was left over was so pityful that I decided not to use it at all. Just used the mushrooms I had bought and which were too much anyway. Too bad your aioli split. Yes artichokes is one of those vegies that people don't realise is a real hassle to prepare. Your final dish looks amazing.
